WFMW--Backwards Day--Easy Dinners? Crock Pot Especially?

Everyone was so helpful last time, I'm hoping for more help this time.

What's your favorite easy dinner--either slow cooker or takes less than half an hour once you are home?

Thanks everyone! Have other good advice to give or that you need? Go see Shannon--she's full of good ideas and so are her readers!

My mom used to make something like this. She's working now, but here is what I could recollect....funny story behind this: I attempted to make it one night and instead of grabbing evaporated milk, I grabbed sweetened condensed milk. (I don't recommend that!!!) Enjoy!

Broccoil and "White Meat" Casserole
INGREDIENTS:

4 c. cubed cooked chicken or turkey
½-1 cups fresh sliced mushrooms (I think you can use the canned ones too)
1 (5 oz.) can water chestnuts, drained and cut into slivers
1 pkg. frozen chopped broccoli, about 1 1/2 to 2 cups (the boxes like you have)
1/2 cup chopped onion (white or yellow), shallots are good too
Paprika
About 1 cup of the sauce; adjust to how creamy you want it/amount of meat and veggies you add
.
Sauce:
1/4 c. butter
1/4 c. flour
1/2 tsp. salt
1/4 tsp. pepper
1 c. chicken broth
1/2 cup evaporated milk
2 tbsp. cooking sherry

PREPARATION: (ingredient prep-5 mins; assembly in crock pot 3 minutes)
Spread half the chicken in the slow cooker/Crock Pot.
Top with mushrooms, water chestnuts, onion and broccoli.
Arrange remaining chicken on top.
Cover with sauce. Sprinkle with paprika.
Cover and cook on low for 4 to 6 hours or high for 2 hours.

Sauce Instructions: (maybe 10 minutes to make)
Melt butter in medium saucepan over low heat. Blend in flour, salt, and pepper. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat. Stir in broth and milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Remove from heat; stir in wine. Makes about 2 cups.

A friend gave me "Fix-It and Forget-it 5 Ingredient Favorites"cookbook. I use this cookbook all the time. It has a lot of ingredients would have in your pantry.

This is my favorite. We like it over egg noodles or rice. It makes enough for 1 meal for 4 adults. We like ours with a lot of meat so I often double it.

No Peek Beef Tips

2# cut up steak or beef stew chunks
1 can Golden Mushroom soup
4 oz mushroom pieces drained
1/2 pkg. Lipton Onion soup mix
1 c. ginger ale

Mix and cook on low for 6-8hrs until done. **a slow cooker liner makes cleanup easy**

Vegetarian Black Bean Burritos

In microwavable bowl heat two cans of Amy's vegetarian refried beans (black bean flavor). While heating, dice an onion and a tomato, and chop some lettuce. Place refried beans on Trader Joe's Homemade Whole Wheat Flour tortillas, and sprinkle with organic pre-shredded sharp cheddar cheese. Nuke in microwave to melt cheese. Then top off with fat free sour cream, tomato, onion, lettuce. Fold up burrito, and coat liberally with Pace Picante sauce.

Easy, microwavable meal that has good protein, dairy, healthy carb, and veggies.

Burrito chicken

4 frozen chicken breasts
1 can Rotel
1 package Low-sodium Taco seasoning

Place chicken breasts at the bottom of the crock-pot. Then add the Rotel and Taco seasoning. Let cook for 9 and a half hours on low. Shred the chicken and the let cook for another half hour. Use as a burrito filling. Put whatever you want on your burrito and enjoy!

Here's an easy, delicious crock pot stew I "invented."

1 can tomato soup
2 tsp. minced garlic
2 tsp. beef bullion
1-2 pounds beef stew meat
1 cup baby carrots
2 medium-large potatoes, cubed
1 celery stick chopped
1/2 white onion cubed

Just mix it all up in the crock pot, put it on low, and by dinner time... yum! Serve with garlic bread or rolls.
